ISC brings the Island way of life directly
to your door, served on the halfshell.
Located in the town of Borden in Prince Edward Island, ISC works directly with local fishermen to seek out the Island’s freshest and most unique oyster varieties. We take pride in introducing Canadians the true spirit of fishing in Atlantic Canada, by bringing our products directly to customers across the country. Here, you can experience the essence of our way of life through the stories, voices, and tasting notes that rise from our famous fishing grounds.
Shipwreck Select
A Full bodied wild oyster traditionally harvested by fishers using oyster tongs. They have sweet flavours of the South Shore and also the briny flavours of the North Shore.
Lucky Lime
Located in the most northern part of New London Bay with the salty influx of the Gulf of St. Lawrence, Lucky Limes develop a unique salty flavour and superior shaped shell.
Colville Bay
These bottom growers are located in the eastern waters of PEI in the heart of Colville Bay. Their beautiful green shells and sweet and salty flavours are attributed to the algae, cold waters and current of the Bay.
Raspberry Point
Coming from one of the most northern stocks of oysters in North America and taking a full six years to grow, these oysters carry a wonderful salty taste with clean flavour and a sweet finish.
Rusticos
Wonderfully shaped off bottom grown oysters with excellent meat quality. Superb salty taste is the result of the cold water and strong tides.
Fortune Bay
A classic great tasting Malpeque oyster. Characterized as having a sharp brine with crunchy meat and a sweet vegetal finish.
Savage Blonde
Known for their smooth blonde shells and taste, these oysters are constantly jostled by the seas creating strong shells perfect for shucking.
